Linguine with Vodka and Herb Sauce

We had some cream in the fridge that needed to be used up a few nights ago, so I made this for dinner.

Linguine with Vodka and Herb Sauce

Ingredients
1/2 pound dried linguine
2 tablespoons butter
1/2 large onion, chopped
2 medium cloves garlic, minced
2 teaspoons dried thyme
2 teaspoons dried tarragon
1 teaspoon dried basil
1 cup heavy cream
1/2 cup vodka
1/2 cup grated Parmesan cheese

Directions
Cook linguine per package directions. Drain.

Meanwhile, melt butter in a large skillet over medium heat. Add onion and saute 5 minutes. Add garlic and saute another 5 minutes. Add herbs and saute another 1 minute.

Add vodka and simmer 2 minutes. Add cream and simmer until slightly thickened, about 7 minutes. Remove from heat.

Add drained linguine and cheese to skillet, tossing until sauce coats linguine. Season with salt and pepper. Serve hot.
