Balsamic tomato sauce

This is a really easy but filling and tasty pasta sauce that I've been meaning to post for a while now. Good for a week night when a jar of sauce from the grocery just won't cut it. I mean, I love me a jar of Newman's Own, but sometimes the situation calls for homemade.

Balsamic tomato sauce

Ingredients

1-2 tablespoons olive oil
3 medium cloves garlic, minced or pressed
2 cups cooked garbanzo beans
1 26-ounce carton of chopped tomatoes
2 tablespoons balsamic vinegar
salt and pepper
2-4 ounces feta cheese

Directions

Saute garlic in some olive oil in a medium skillet over medium heat. Add garbanzo beans and saute for 5 minutes. Add tomatoes and vinegar. Add salt and pepper to taste. Let simmer for 10 to 15 minutes, stirring occasionally. Turn off heat and crumble feta over sauce. We use 4 ounces of feta because we like a lot of feta flavor, but if you want it to be more subtle, go with the 2 ounces. Stir. Serve immediately over rotini or similar pasta.
