Buckeyes

Let me start by saying that I don't like these at all. The smell alone makes me gag. But I also can't stand Reese's Peanut Butter Cups, so I am a crazy person. I do have it on good authority that if you happen to actually enjoy eating peanut butter and chocolate mixed into a single food item--oh, the horror!--these are pretty tasty.

This recipe makes 40 or so buckeyes, a number that seems like a lot to me, particularly in a household in which only one resident eats them. Luckily, they keep well in the fridge.

Buckeyes

Ingredients
3/4 cup peanut butter
1/2 cup butter
1/4 teaspoon vanilla
3 cups powdered sugar
2+ cups semi-sweet chocolate chips

Directions
Cream peanut butter, butter, and vanilla. Add powdered sugar and mix thoroughly. The mixture will look a bit dry.

Roll mixture into one-inch balls and place on a cookie sheet lined with waxed paper. Chill balls in freezer until firm, about 30 minutes.

Melt the chocolate chips in a double boiler over simmering water until smooth, stirring frequently.

Stick a toothpick in a ball and, using the toothpick as a handle, dip the ball in the melted chocolate. Coat the ball well, leaving a small area of the peanut butter mixture showing at the top. Put the ball back on the sheet and carefully remove the toothpick. Repeat.

Let the chocolate set in the fridge. Refrigerate until serving.

Oh, you must add Rice Krispies cereal. It gives it a crunch.:)

Oh I love these and yes I agree they are wonderful with the Rice Krispies cereal added !
I have never heard of Anyone that doesent like peanut butter and chocolate! You are one of a kind LOL!

I've never heard of putting Rice Krispies in them, but Adam might like that--thanks for the tip!
